The “Angel Hair” Phenomenon: The Viral Successor to Dubai Chocolate

Reading Time: 5 Minutes

We are here for the 2025 Viral Sensation: The Angel Hair Stuffed Chocolate Bar.

Just as the world was recovering from the crunch of the “Dubai Chocolate” (Knafeh), TikTok crowned a new queen. This trend swaps the crunchy pastry for Pashmak (Persian Fairy Floss), creating a bar that dissolves instantly on the tongue like a sweet, nutty cloud.

What Exactly is “Angel Hair” (Pashmak)?

The secret ingredient is Pashmak (or Pişmaniye in Turkish).

It is NOT: Regular carnival cotton candy (which is just sugar and air).

It IS: A dense, nutty floss made from sugar and roasted flour spun into thousands of fine threads.

The Magic: Because it contains flour and oil, it doesn’t dissolve immediately when it touches the pistachio cream, unlike regular cotton candy which would turn into a sticky puddle.

The Recipe: Homemade Angel Hair Chocolate Bar

Better than the $30 imported bars, and ready in 20 minutes.

Ingredients

  • 200g White Chocolate or Ruby Chocolate (Ruby gives that viral pink look).
  • 100g Pistachio Cream (Use a high-quality jar like Pisti or El Mordjene).
  • 50g Pashmak / Pişmaniye (Vanilla or Pistachio flavor). Look for this in the international aisle or Middle Eastern grocers.
  • 1 tbsp Tahini (Optional, adds a nutty depth to cut the sugar).

Instructions

  1. 1. Create the Shell Melt your chocolate in the microwave in 30-second bursts. Pour a small amount into your silicone chocolate bar mold. Use a pastry brush or the back of a spoon to coat the bottom and sides thinly.
    • Tip: You want a thin snap!
    • Freeze for 10 minutes.
  2. 2. The Cream Layer Once the shell is hard, spread a layer of pistachio cream into the mold. If using tahini, mix it into the cream first. Do not fill it to the top—leave room for the “hair.”
  3. 3. The “Angel Hair” Take a handful of Pashmak. Gently tease it apart so it stays fluffy. If you compress it, it loses the magic texture. Lay it gently over the pistachio cream. It should look like a little cloud trapped inside the bar.
  4. 4. The Seal Pour the remaining melted chocolate over the Pashmak. Tap the mold gently on the counter to release air bubbles, but be careful not to crush the floss.
  5. 5. The Reveal Refrigerate for 20 minutes until solid. Pop it out and snap it in half for that satisfying ASMR crack and the visual pull of the angel hair strands.

Frequently Asked Questions

You can, but you must eat it immediately. Regular cotton candy melts instantly when it touches moisture (like the oil in the pistachio cream). Pashmak is much more stable.

Search for “Persian Fairy Floss” or “Turkish Pişmaniye” on Amazon or at your local ethnic grocer. Common brands include Hajabdol or Koska.
